Yield: 2 servings
thick slices of crusty bread
generous drizzle of olive oil
medium red onion, diced roughly
300g cucumber, diced roughly
150g cherry tomatoes, quartered
Toss all the topping ingredients together in a bowl and leave it covered in the fridge for the flavours to mingle. When ready to eat, toast the bread, rub the garlic into the toasted surface, and drizzle generously with olive oil before spooning the salad on.
