Ingredients

  • Now for the Dressing:
  • 1 head of lettuce (chopped)
  • 10 cooked shrimp (chopped)
  • 1 lb. crab meat (cleaned and picked free of shells)
  • 1/4 cup chopped green pepper
  • 1/4 cup shredded carrots
  • 1 tbsp. sliced green onions
  • Combine all of these ingredients together in a bowl.
  • 1 tbsp. chopped fresh parsley
  • 2 tsp. fresh lemon juice
  • 1/4 tsp. grated lemon zest
  • 1 tbsp. fat-free mayonnaise
  • 1 1/2 tsp. olive oil
  • Mix all ingredients together; mix well. Add to the shrimp/crab mixture; mix well. Top chopped lettuce with mixture; serve.
