Olive oil for saucepan
Heat oil over medium in saucepan, add chopped tomatoes, and let the tomatoes cook for 1–2 minutes, or until they begin to breakdown a bit Add the chicken and guajillo sauce. Cook the compote until the chicken begins to absorb some of the sauce, another 2–3 minutes. Either fry the eggs in a seperate pan with olive oil, or poach the eggs, covered, over the compote on low heat, for an additional 3 minutes.
