red bell pepper, seeded and diced
scallions (white part only, thinly sliced)
eggs, beaten
cup grated jalepeno monterey jack cheese (or cheddar for non-spicy version)
cup grated monterey jack cheese
Preheat oven to 350.
Heat oil in the skillet. Saute the pepper, scallions and kale for 3–4 minutes until soft. Whisk the eggs, cheeses, salt and pepper into the pan.
Cook the frittata over low heat for 2–3 minutes. As the eggs begin to set, lift and tilt the uncooked portion over the set edges.
Put the fritatta in the oven for 12–15 minutes, until the eggs have set.
