A quick and easy supper for weeknights that's elegant enough for entertaining.
Yield: 3 servings
1. Preheat oven to 350 F. Combine glaze ingredients in a bowl or measuring jug.
2. Season roast on all sides with salt and pepper. Heat a large skillet over medium-high heat. Add olive il and heat until shimmering. Brown pork roast on all sides and transfer to a baking dish.
3. Spoon enough of the glaze mixture over the pork to coat it. Place pork in the oven and cook 20–30 minutes, or until instant-read thermometer inserted in the center registers 135 F for medium.
4. Meanwhile, pour the rest of the glaze mixture into the (still-hot) pan. Scrape up any browned bits with a wooden spoon and continue cooking over medium-low heat until it has reduced to a syrupy consistency.
5. After removing the pork from the oven, let it rest 10 minutes. Slice across the grain and arrange slices in the baking dish. Pour glaze over the slices.
6. Serve warm with a green salad.
