Peso Salmon and Vegetables en Papillote

Ingredients
- 6 sm new potatoes, sliced
- 1 # fresh green beans
- 6 12" square of parchment paper
- 6 6oz salmon fillets
- 6 thin slices of lemon
- 6 tbs prepared pesto
- 6 tbs shredded carrots
- 6 tbs sliced gr. onoin
- 6 tbs sliced, black olives
- 1 1/2 tsp dried thyme, crushed

Step 1
Fill medium saucepan 2/3 with cold water, add potatoes and beans, bring to a boil and cook 5 minutes until almost tender, remove and cool.
Preheat oven to 350 degrees. Place squares of paper on the counter; divide patatoes and beans evenly among paper, place one salmon fillet in the center. Top each with one lemon sllice and 1 tablespoon of pesto, carrot, green onion and olives. Sprinkle each with 1/4 teaspoon of thyme.
Bring up two opposite sides of paper, seal eith a double fold, Double fold the remaining ends to seal packets.
Place packets on a large baking sheet. Bake for 25 minutes or until fish is flaky. Let packets rest a few minutes before opening to avoid hot steam.
