  • 3/4 cup sugar
  • 3 Tbs cornstarch
  • 3 cups whole or 2% milk
  • 4 beaten egg yolks
  • 1 Tbs butter
  • 1 1/2 tsp vanilla (or almond extract)

Step 1

1. In a medium heavy saucepan combine sugar and cornstarch. Stir in milk. Cook and stir mixture over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Meanwhile, put the beaten egg yolks in a medium bowl; set aside. Remove pan from heat. Gradually stir 1 cup of milk mixture into egg yolks. Add the egg mixture to the rest of the milk mixture in saucepan. Bring to a gentle boil; reduce heat. Cook and stir 2 more minutes.
2. Remove pan from heat. Stir in butter and vanilla. Pour pudding into a bowl. Cover the surface of pudding with plastic wrap. Serve warm or cold. Do not stir during chilling.

to make chocolate pudding:
decrease the cornstarch to 2 Tbs
decrease the milk to 2 2/3 cup
add 1/3 cup cocoa powder along with the sugar

to make lemon pudding:
decrease milk to 2 1/2 cups
add 1/2 cup fresh lemon juice with the butter
