Florentine Style Sirloin Steak

A staple on my family menu. We serve this up anytime we feel like sharing a yummy stick to your bones steak dinner.

If you don't indulge in mashed potatoes or any starchy side, this recipe fits into the South Beach Diet.

Trim the meat of any excess fat (only if you really want too. In a bowl, mix together the olive oil, garlic, and lemon pepper, to make a paste. Do not salt the beef at this time. Rub the paste onto the meat until well covered. Place the meat into a bowl or ziplock bag to marinate for about 1 to 3 hours. For best results, marinate for up to 3 hours.

After marinating, pre-heat oven to 400 degrees F. Heat up a cast iron skillet will some olive oil. A frying pan would be fine, if you are able to put it into the oven, if not, use the frying pan first, then transfer the steak to a baking sheet before transferring to the oven.

Season one side of steak and place salted side down on to the hot pan and sear this side of the steak. Do the same on the other side. Place steak and pan into the oven to conitinue roasting for about 10 to 15 minutes, until your desired doneness. After roasting, transfer the roast to a wooden chopping board and let rest for approximately 10 to 15 minutes.
Slice steak to serve, restaurant style, or not at all, and serve with your favorite side dish.
