Creamy Mashed Potatoes

- 2 1/2 lb Yukon Gold Potatoes
- 1/4 c. butter + extra for the top
- 1 3oz pkg softened cream cheese
- 1/4 c. half-and-half
- 1/4 tsp seasoned salt
- Black pepper to taste

Step 1
Peel and dice the potatoes. Place potatoes in a large pot cover with water. Bring to a boil and cook for 25-30 minutes or when a fork easily slide into the potatoes with no resistance, and the potatoes should almost, but not totally, fall apart. Drain the potatoes and place them back into the dry pot. Mash the potatoes and allow the steam to escape, before adding in all the other ingredients. Add butter, cream cheese and half-and-half. Mash, mash, mash! Next, add about seasoning salt and pepper. Stir well and place in a medium-sized baking dish. Throw a few pats of butter over the top of the potatoes and place in a 350 degree oven and heat until butter is melted and potatoes are warmed through.
