  • 1 diced sweet onion
  • 1 c. shredded Colby Monterey Jack cheese
  • 2 beaten eggs
  • 1 c. buttermilk
  • 1/4 c. oil
  • 3 tsp sugar
  • 1 15 oz can creamed corn
  • 2 chopped jalapenos
