  • 1/2 tbs butter
  • 1 tbs oil
  • 2 minced garlic clove
  • 2 sliced gr onions
  • 1 1/2 tbs minced fresh ginger
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp ground cloves
  • 1/2 tsp ground cardamon
  • 1/4 tsp dry mustard
  • 1/2 tsp ground turmeric
  • 1/2 cinnamon stick
  • 1 tsp salt
  • 3 c. chicken broth
  • 3 tbs lime juice
  • 1 tbs honey
  • 3 sliced carrots
  • 1 1/2 c. sliced mushrooms
  • 2 c. cauliflower florets
  • 1 med diced potato
  • 1 c. broccoli cole slaw mix

Step 1

In large saucepan melt butter and add the oil. Cook the garlic, onions and ginger stirring for one minute. Add spices and cook 2 minutes to release the flavors. Add chicken broth, lime juice and honey. Cook 4 more minutes. Add the vegetables and cook covered until tender about 15-20 minutes. Remove cinnamon stick and serve.
