Orange-Ginger Oatmeal Scones
Ingredients
- 1/2 cup Flour
- 1/2 cup White Whole Wheat Flour
- 3 tbsp Brown Sugar
- 1 tbsp White Sugar
- 1-1/2 tsp Baking Powder
- 2 tsp Ginger Powder
- Grated rind of 1 Orange
- 1/3 cup Butter
- 1 cup Quick Rolled Oats, toasted
- 2 Egg Whites
- 1 tsp Vanilla
- 2 tbsp Fresh Orange Juice

To toast the oats; spread oats on a cookie sheet and place in a 375 degree oven for about 10-15 minutes, stirring every 5 minutes. Set aside to cool. Turn the oven up to 400 degrees.
In a large bowl, add flours, sugars, baking powder, ginger, baking powder. Sprinkle in the orange rind, tossing until it is completely covered with dry ingredients.
Cut butter into small pieces and add to the dry ingredients, mixing well with a pastry cutter until butter is incorporated and mixture looks like small peas. Add the toasted oatmeal and mix until well blended.
In a small bowl, mix egg whites, vanilla and orange juice, mixing until blended. Make a well in the dry ingredients and pour in the liquid.
Stir with a fork until the mixture comes together. Take it out with your hands and place it on a lightly floured cutting board. Dough will feel sticky. Using your hands, shape the dough into desired shape; circle or square. Cut into desired shapes. Place on a parchment lined baking pan. Spread a little milk on top of each scone and sprinkle with a little raw sugar, if desired.
Place on middle rack of the oven and bake for 12-15 minutes at 400 degrees.
Remove from oven and place on a wire rack to cool.
