- 1/4 c. oil
- 2 tbs lemon juice
- 1 tsp Dijon mustard
- 1 tsp sugar
- 10 oz shredded carrots
- 1/2 c. craisins
- 1/2 c. toasted slivered almonds
- 8 oz pineapple chunks

Step 1
Combine first 4 ingredients and set aside. In bowl. Combine remaining ingredients and toss with dressing. Chill at least 2 hours before serving.
