Ingredients

  • 2 1/2 Cup all-purpose flour
  • 1/2 Cup whole-wheat flour
  • 1 Cup dried currants
  • 1 Cup light-brown sugar
  • 1 Tbl baking powder
  • 1 Tsp baking soda
  • I couldn't find currants but my friendly Walmart Grandma helped me and told me to use white raisins.

Step 1

Combine all the ingredients in a mixing bowl and store in an airtight container, or layer them in the jar as follows...
1 1/2 c. flour
1 c. brown sugar
remaining flours, baking powder and soda mixed together
1 c. dried currants

Makes 1 Loaf

1 package Irish Soda Bread Mix
1/4 c. butter or margarine, softened
2 eggs
1 1/2 c. buttermilk

Preheat oven to 350 degrees. Place the Irish Soda Bread mix into a large bowl. Cut the butter into the mix. Add eggs and buttermilk, and stir to blend. When the mixture is smooth, pour into a greased and floured 9-inch springform pan. Bake for 45 minutes, or until a toothpick inserted into the middle comes out clean. Serve warm.
