A healthy version of fish sticks that includes a dipping sauce. I haven't tried these, just posted it for YOU Cristina!!
Yield: 6 servings
pounds fresh or frozen cod or other fish fillets, about 1 inch thick
1-ounce envelope ranch dry salad dressing mix
cup butter or marg., melted
cup low-fat mayo or salad dressing
1.)Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Cut into 3 X 1 inch strips. Lightly coat baking sheet with nonstick spray. Set aside.
2.)Place the ⅔ cup milk in shallow dish. Place flour in another shallow dish. In a third shallow dish combine bread crumbs, 2 Tbsp of the salad dressing mix, ¼ tsp of dry mustard, and the pepper. Add melted butter; stir until combined (if necessary, use your fingers to break up any clumps.)
3.)Dip fish in the ⅔ cup milk; lightly coat with flour. Dip again in the milk; lightly coat with bread crumb mixture. Place fish on prepared baking sheet. Bake, uncovered in a 450 degree oven for 10 to 12 minutes, or until fish flakes easily with fork.
4.) Meanwhile, for dipping sauce, in a small bowl combine sour cream, mayo, 2 Tbsp milk, remaining salad dressing mix, and remaining ¼ tsp dry mustard. Add additional milk, if necessary to reach desired consistency. Serve with fish.
