Mini Margarita Donuts

These donuts aren't your typical donut, but they are so good! Tequila and lime?? How can you go wrong?? :)
They are baked and not deep-fried!
Ingredients
- For the donuts:
- 1/2 C. sugar
- 1 tsp. grated lime zest
- 1-1/4 C. cake flour
- 1-1/4 tsp. baking powder
- 1/2 tsp. salt
- 1/2 C. buttermilk
- 1 egg
- 1-1/2 tbsp. butter, melted
- 1 tsp. tequila
- For the glaze:
- 2 tsp. grated lime zest, plus extra for garnish
- 1 C. powdered sugar
- 3 tsp. fresh squeezed lime juice
- 2 tsp. tequila
- margarita salt (optional)

Preparation
Step 1
1.Spray donut pan with non-stick cooking spray.
2. Heat oven to 400 degrees F.
3. In a large mixing bowl combine sugar, lime zest, cake flour, baking powder, and salt.
4. Add buttermilk, egg, butter, and tequila. Mix until combined.
5. Add batter to a piping bag and fill each donut cup about 1/2 full.
6. Bake 4-6 minutes or unti the top of the donuts spring back when touched.
7. Let cool completely and then dip the top of each donut into the glaze.
8. Sprinkle on margarita salt and lime zest. (Optional.)
