tbsp. freshly squeezed lime juice
cups shelled edamame, cooked according to package directions
large ripe Hass avocado, diced
cup roasted sliced seaweed or 1⁄2 cup rehydrated hijiki or wakame*
Heat oven to 300°F. Spread pine nuts in small baking pan and toast until golden, 10 minutes. Cool.
Combine lime juice and tamari or soy sauce in small bowl. Whisk in sesame and peanut oils until emulsified. Season with pepper to taste and set aside.
Just before serving, arrange lettuce leaves in a shallow salad bowl.
To serve, toss the edamame, avocado and seaweed with dressing. Lay onto the lettuce. Sprinkle pine nuts on top and serve. Serves 4.
