Ingredients

  • 1 3/4 cups gluten-free all-purpose flour
  • 3/4 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • 1/2 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon minced fresh sage
  • 3 large eggs
  • 1/3 cup milk
  • 1/3 cup olive oil
  • 1 cup unpeeled chopped apple
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked crumbled bacon (about 5 slices)
  • Notes: Though many gluten-free flour varieties may include the ingredient, I recommend following as directed and including the additional amount, @Anonymous.

Preparation

Step 1

1 Preheat oven to 350 degrees F. Grease a 9-by-5-inch loaf pan and set aside.

2 In a large bowl, whisk together flour, xanthan gum, baking soda, baking powder, salt and sage.
3 In a separate bowl or bowl of a stand mixer, whisk eggs, milk and olive oil.

4 Gradually add dry ingredients to wet ingredients, stirring to combine. Add apples and cheese and stir until just combined. Fold in crumbled bacon.

5 Pour batter into prepared loaf pan and bake 50 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

6 Remove pan from oven and place on a cooling rack 10 minutes before removing from pan. Cool completely before slicing
