Gluten Free Bacon-Apple Cheddar Bread

Light, fluffy, gluten-free quick bread studded with bacon, apples and cheddar cheese
Ingredients
- 1 3/4 cups gluten-free all-purpose flour
- 3/4 teaspoon xanthan gum
- 1 teaspoon baking soda
- 1/2 teaspoon gluten-free baking powder
- 1/2 teaspoon salt
- 1 tablespoon minced fresh sage
- 3 large eggs
- 1/3 cup milk
- 1/3 cup olive oil
- 1 cup unpeeled chopped apple
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cooked crumbled bacon (about 5 slices)
- Notes: Though many gluten-free flour varieties may include the ingredient, I recommend following as directed and including the additional amount, @Anonymous.

Preparation
Step 1
1 Preheat oven to 350 degrees F. Grease a 9-by-5-inch loaf pan and set aside.
2 In a large bowl, whisk together flour, xanthan gum, baking soda, baking powder, salt and sage.
3 In a separate bowl or bowl of a stand mixer, whisk eggs, milk and olive oil.
4 Gradually add dry ingredients to wet ingredients, stirring to combine. Add apples and cheese and stir until just combined. Fold in crumbled bacon.
5 Pour batter into prepared loaf pan and bake 50 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
6 Remove pan from oven and place on a cooling rack 10 minutes before removing from pan. Cool completely before slicing
