Ingredients

  • 2 T butter
  • 1/2 ½ cup finely chopped onions
  • 2 bay leaves
  • 1 clove garlic, finely chopped
  • 1/4 ¼ cup broken spaghetti pieces
  • 1 cup uncooked brown rice
  • Celery leaves
  • 2 sprigs parsley
  • 2 cups chicken broth

Preparation

Step 1

Sauté the onions, bay leave and garlic in butter. Add broken spaghetti and uncooked rice continue cooking a few minutes. Do not brown the onions. Remove bay leaves and add celery leaves and parsley. Blend well with the hot chicken broth. Bring to a boil and cover. Reduce heat and cook 35 minutes. Salt to taste. This rice keeps well in refrigerator for 1 week. Makes 8 to10 servings.
