Ingredients
- 1/2 cup Sugar
- 1 tbsp Cornstarch
- 1/8 tsp Salt
- 1 cup Boiling Water
- 2 tbsp Butter
- 1 tsp Fresh Lemon Rind, grated
- 3 tbsp Fresh Lemon Juice

Preparation
Step 1
Combine the sugar, cornstarch and salt in a small saucepan, mixing well. Stir in boiling water and bring to a boil again, stirring constantly. Lower the heat and simmer, stirring until sauce is thickened and clear. Stir in butter, lemon juice and lemon rind. Pour over warm ginger bread! Note: This is much lighter than lemon curd. Lighter in color, consistency and calories. This is perfect for pouring over your gingerbread or leaving in a puddle on the plate under your gingerbread.
