Saute garlic and onion in butter. Add ground beef until browned crumble then add salt and pepper. Add beef and all ingredients; except masa, into large stock pot. For every can of tomatoes add can of water.
Cook until it boils for 20 minutes. Turn down heat and simmer for one hour. Then add masa and cook for an additional hour to thicken. Best if served the next day.
Echiladas:
Dip tortillas into grease that is 300 degrees in skillet. 10 seconds on each side.
Put tortilla in a 9×13 pan add cheese and roll up tortilla. Continue with all 24 tortillas. Pour chili over enchiladas then add cheese on top. If desired add chopped onions.
Bake at 350 degrees for 25 minutes until cheese is melted and bubbling.
