Yield: 12 servings
tablespoons ground bay leaves
broiler-fryers (2 ½ pounds each), quartered
cup (2 sticks) butter, softened
Combine dry seasonings well. Rub on both sides of chicken quarters. Stir butter and lemon juice in a bowl until blended; brush part over chicken.
Grill chicken, skin side down, 6" from grayed coals for 20 minutes. Turn, brush again; continue grilling about 20 minutes longer, until done. OR: Broil, 6 " from heat, skin side up, for 20 miutes. Turn and brush again; broil 20 minutes longer.
