  • 3 Eggs
  • 1-1/4 cups Light Brown Sugar or Granulated Sugar
  • 1-1/3 cups Flour
  • 1-1/2 sticks Butter, melted
  • a pinch of Salt

Step 1

Preheat the oven to 350 degrees.

Beat the eggs, add the sugar and continue beating over a pot of simmering water until a foamy cream is formed. Sift the flour and mix with the salt. Away from the heat , fold in first the flour then the melted butter (it should be warm but not hot).

Butter an 8-inch pound cake pan, pour in the batter and bake for about 45 minutes. Test by pricking with a trussing needle; it should come out clean if the cake is done. Remove from the oven and turn out. Allow to cool before serving.

Chef's Comments:
Pound cake is generally made with granulated sugar, but it has a more unusual taste if light brown sugar is used.

Pound cake keeps very well. it can even be baked several days in advance.
