  • 5 tbsp Butter, softened
  • 3 tbsp Honey
  • 7/8 cup Flour
  • 1 Egg Yolk
  • Pinch of Salt
  • 1/4 cup Sugar
  • 2 tbsp Honey, for glaze

Step 1

Beat the honey and butter together until smooth.

Place the flour on the table and make a well in the center; place the egg yolk and salt in the well. Mix the flour with the egg yolk, then add the butter/honey and the sugar, working the dough as quickly and as little as possible wit the tips of your fingers.

When the dough is perfectly mixed, form it into a ball and leave to rest in the refrigerator before baking.

Baking:
Preheat the oven to 350 degrees.

Lightly flour the table and roll out the dough to a thickness of about 1/8 inch. Use a 1-1/4 inch fluted cookie cutter to cut into rounds.

Melt the remaining honey in a double boiler and brush a little onto each cookie, then bake for about 10 minutes or until they begin to brown.

Remove from the oven and allow to cool completely before serving.
