Ingredients

  • 1 Egg, large
  • 1/4 cup Low Fat Yogurt
  • 1/2 cup Blue Diamond Vanilla Milk
  • 1 tsp Orange or Lemon Zest
  • 2-1/4 cups White Whole Wheat Pastry Flour
  • 1/4 cup Sugar, plus more for sprinkling if desired
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 4 tbsp Butter
  • 4 tbsp Coconut Oil
  • 1 heaping cup Fresh Diced Strawberries

Preparation

Step 1

In a small bowl, mix the egg, yogurt, almond milk and zest until blended; set aside.

In the bowl of a food processor, combine the flour, sugar baking powder and salt. Pulse to blend. Add the butter and coconut oil and pulse until the butter and coconut oil are the size of small peas. Pour this mixture into a larger mixing bowl.

Add the strawberries to this mixture and toss a couple of times until all strawberries are coated. Make a hole in the center of dry mixture and pour liquid ingredients into center. With a fork, stir and fold together until a dough begins to form. Use your fingers to bring it all together.

Place the dough on a lightly floured surface and knead a few times. Form into a circle or square, depending on the shape you want. Cut dough into desired shapes.
Sprinkle with additional sugar if desired.

Place on a cookie sheet covered with parchment paper. Bake at 425 for approximately 15 minutes or until lightly brown on top.
