Blueberry Cobbler

This cobbler is perfect in the summer, when blueberries are at their peak! Serve with a scoop of ice-cream for extra sweetness.

- 2/3 cup flour
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup skim milk
- 2 tablespoons butter, melted
- 2 cups blueberries

Step 1
Preheat oven to 350°F
In a large bowl, combine flour, sugar, baking powder and salt. Stir in milk and mix well into a smooth batter.
Melt butter in 1 1/2-quart baking dish in microwave on high for one minute. Pour batter into melted butter; do not stir. Drop blueberries on top of batter; do not stir.
Bake at 350°F for 40 to 45 minutes.
