Ingredients

  • 2 tbs olive oil
  • 1 lg onion, chopped
  • 1 sweet green pepper, choppped
  • 2 cloves garlic, minced
  • 1 can black beans, drained & rinsed
  • 1/2 c. chopped tomato
  • 1/2 c. clam juice
  • 1/4 tsp oregano, crumbled
  • 1 # catfish fillets (red snapper, sea bass)
  • 1/8 tsp ground allspice
  • 1/8 tsp ground cloves
  • 1/8 tsp ground red pepper, opt

Preparation

Step 1

Heat 2 tsp oil in large skillet over low heat. Add onion, cover and cook, stiring occasionally until tender. Add 1 teaspoon of oil, green pepper and garlic cover and cook about 5 minutes. Stir in beans, tomato, clam juice, and oregano, cover and cook 5 minutes over moderate heat.

Meanwhile, rub catfish with the allspice, cloves and red peppper. Heat remaining oil in second skillet. Add fish; cook on one side until fish had colored, about 3 minutes. Turn fish over and place colored side up on top of beans in first skillet. Cover and cook over moderate heat for 5-7 minutes or until fish is cooked through.
