This is the cheesecake that made me like cheesecake.
Yield: 12 servings
T flour (it will make sense later)
Combine 1 cup flour with ¼ cup sugar and butter
Mix with fork or pastry blender until crumbly and patt innto 9 inch spring form pan.
In medium bowl, combine rhubarb, ½ cup sugar and 2 T flour.
Pour over crust and bake at 375 degrees for 15 minutes
Combine cream cheese, ½ cup sugar til creamy.
Add eggs 1 at a time and beat well. Pour over hot rhubarb in pan and reduce heat to 350 degrees.
Bake 30 min or til filling is set.
Combine sour cream, 2 T sugar and vanilla and spread over hot cheese cake.
Let cool completely and chill in refrigerator.
