Ingredients

  • Filling:
  • 1 cup Sugar
  • 3 tbsp Cornstarch
  • 1/3 cup Lime Juice
  • 1 tbsp Lime Rind, grated
  • 1 cup Half and Half
  • 1/4 cup Butter
  • 1 cup Sour Cream
  • Topping:
  • 1 cup Whipping Cream
  • 1 tbsp Sugar
  • 1/4 cup Sour Cream
  • 1 tbsp Lime Rind, grated

Preparation

Step 1

Prebake your favorite 9" pie crust.

Filling:
Mix sugar and cornstarch together in saucepan. Stir in lime juice with rind, light cream and butter, over low heat.

Stir over medium heat until mixture begins to thicken. Whisk vigorously to boil until shiny and ribbony. Remove from heat, cover with wrap and cool until semi-set.

Fold sour cream into lime mixture and pour into pie shell. Cover with wrap and refrigerate until set.

Topping:
Beat whipping cream to stiff peaks, gradually adding sugar, fold in sour cream.

Decorate with spatula. Sprinkle with lime rind. Let topping set up one hour.
