Ingredients

  • For 4 cups:
  • 1/2 cup Oatmeal
  • 3/4 cup Hot Water
  • 1/2 cup Butter
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 3/4 cup Flour
  • 1/2 cup Wheat Germ
  • 1 tsp cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/8 tsp Vanilla
  • 1/8 tsp Nutmeg

Preparation

Step 1

Mix oatmeal, hot water and butter and cook for 20 minutes.

Beat brown sugar and eggs together.

Add flour, wheat germ, cinnamon, baking soda, baking powder, vanilla and nutmeg to brown sugar/egg mixture.

Mix oatmeal and flour mixtures together.

Oatcake mixture will keep for two weeks when refrigerated in covered container.

Just before cooking oatcakes add 1-1/2 cups chopped yellow or green apples. Use pan with a little oil, follow pancake method for cooking.
