Clam Puffs
This recipe is from the cookbook "Coasting & Cooking" "Chefs of the Pacific Northwest Share" by Barbara Williams. This recipe is from La Serre in Yachats, Oregon. I have served these more times that I could count through the years. These are a great make ahead appetizer that freeze well until needed.

Ingredients
- 1-1/4 lbs Cream Cheese
- 18 ounces Clams, chopped and drained
- 1-1/2 tsp Tabasco
- 1-1/2 tsp Worcestershire Sauce
- 1-1/2 tsp Dry Mustard
- 1/2 cup Green Onions, chopped
- 1 tbsp Garlic, minced
- 1/2 cup Parsley, chopped
- Puff Pastry Sheets

Preparation
Step 1
Mix all ingredients together by hand - not machine.
Cut pastry sheets in 3" squares.
Place 1-1/2 tsps of the mixture in each. Pull corners up together and pinch.
Freeze on cookie sheet.
When ready to use, bake on a cookie sheet at 450 degrees for 11 to 12 minutes, until lightly brown.
