Ingredients

  • 5-7 large
  • potatoes - peeled & cut into chunks
  • 1/2 pkg
  • TraderJoes frozen carrots rustica (chopped up yellow & orange carrots
  • 1 tsp
  • salt
  • 1/2 tsp
  • pepper
  • 1/4-1/3 c
  • sour cream
  • 3-4 Tbsp
  • butter or margarine

Preparation

Step 1

Put chopped potatoes & carrots in med/lg saucepan. Cover with warm or hot water and add a pinch of salt.

Bring to a boil. Cook until potatoes are soft enough for a fork to go through easily - 25-35 minutes.

Drain and return to pan. Add sour cream, butter, salt & pepper. Mash with a masher or electric mixer until there are only small pieces of carrots in smooth potatoes.

Serve to family & a bunny if you have one!

If not, invite a bunny to dinner!
