- 3/4 pound Macaroni
- 3 TB butter
- 2 TB flour
- 4 cups milk
- 1/4 tsp salt
- 1/8 tsp red pepper
- 1/8 tsp black pepper
- 2 1/2 cups grated cheddar cheese

Step 1
Cook macaroni according to package instructions. Drain.
Melt butter in a large sauce pan. Stir in flour and cook for about 2 minutes. Slowly add in the milk while stirring. Stir until smooth. (a whisk is very helpful here.) Gradually add the cheese into the sauce. Stirring after each addition. Allow cheese to fully melt before adding more. Add in the cooked macaroni.
The macaroni and cheese can be served at this point, or you can bake it. Put it in a greased casserole dish. Top with Parmesan cheese, bread crumbs, or more cheddar and bake at 400 for 20 minutes.
Notes: Velveeta type cheese will give you a creamier sauce. I prefer the taste of cheddar.
Add in cooked ham or sauteed mushrooms and onions to create a more hearty main dish.
