This makes a wonderful side with an egg dish. it is both sweet and savory.

  • 4-6 Baked Potatoes, thoroughly chilled
  • 1/2 to 1 lb Bacon, chopped (low-salt preferred)
  • 1 large Yellow Onion, chopped
  • 1 tsp Coarse Ground Black Pepper
  • 1/2 cup Brown Sugar, packed
  • 1 tsp Seasoned Salt (Lawry's preferred)
  • 1 to 2 tsps White Vinegar
  • 3-5 dashes Hot Pepper Sauce
  • Paprika
  • Fresh Parsley, chopped

Preparation

Step 1

Peel baked potatoes and cut into one-inch chunks.

Cook bacon until almost crisp. Add onion and saute until it is translucent.

Add black pepper, brown sugar and seasoned salt. Cook over medium heat until a syrup starts to form.

Add vinegar and hot pepper sauce. Cook and stir briefly.

Add potatoes and stir to coat.

Place mixture in top of a double boiler. Cook for 30-45 minutes, stirring occasionally to equalize heat.

Potatoes are done when the flavors have melded. You will see and taste the difference as they cook.

Serve garnished with paprika and fresh parsley.

This dish works well reheated.
