Fluffy Finger French Toast
This recipe is from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn.
These are light and delicious, served with Orange Syrup.
Ingredients
- 1 cup Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Milk
- 2 Eggs, well beaten
- 10 slices White Bread, crusts trimmed
- Orange Syrup
- 1 cup Orange Juice
- 1 cup Sugar
- Vegetable oil for frying
- Powdered Sugar

Preparation
Step 1
First make the Orange Syrup:
In a small saucepan, mi orange juice and sugar. Bring to a boil and boil for 5 minutes. Set aside.
In a separate bowl, sift flour with baking powder and salt.
Stir in milk and eggs. Beat well.
Cut each bread slice in thirds( "fingers") lengthwise.
In a large frying pan, heat 1/2 inch of vegetable oil.
Dip bread fingers into batter. Fry until light and brown on both sides.
Drain fingers and keep warm while frying all.
Arrange on a heated platter and sprinkle with powdered sugar.
Serve with Orange Syrup.
