Cherry Scones

By

Recipe from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn.

I believe this was the first scone recipe that I made. Very easy to make. Very nice when cut with heart shaped cookie cutter.

Very Good!

Preparation

Step 1

In a large bowl, mix the flour, sugar, baking powder and salt.

Chop the chilled butter. Then cut the pieces into the dry ingredients until it resembles coarse meal.

In a small bowl, mix 1 egg with half-and-half or milk.

Make a "well" in the center of the dry mixture. Pour in the egg miture. Then add the cherries and stir until all the dough clings together.

On a floured surface, knead the dough for 10-15 strokes.

Roll out the dough to about 1/2-inch thick.

Using a 2-inch heart-shaped cookie cutter, cut out scones. Place them close together on an ungreased cookie sheet.

Beat the other egg slightly. Brush it on tops of the scones.

Bake in 400 degree oven for 10-12 minutes, or until tops are light brown.
