Ingredients
- 1/2 cup green lentils
- 2 slices bacon, sliced and chopped
- 1 small carrot, shredded
- 1 green onion, sliced
- 1 garlic clove, minced
- 1/2 mediium sized tomato, chopped
- 1 tablespoon dijon mustard

Preparation
Step 1
Saute bacon in a little olive oil until crisp tender.
Add carrot, onions, garlic, and tomatoes.
Saute vegetables until tender.
Add lentils and enough water to cover.
Saute until lentils are tender.
Serve room temperature.
