This recipe came from the June 1999 issue of Redbook magazine. This was my go-to shortcake recipe for many years. I'm posting it here for safe keeping.

Ingredients

  • 2 cups Flour
  • 1/4 cup Sugar
  • 1 tbsp Baking Powder
  • 1 tsp Grated Lemon Zest
  • 1/4 tsp Salt
  • 1/3 cup Butter
  • 2/3 cup Half-and-Half
  • 4 cups Strawberries
  • 1/3 cup Sugar
  • 1 cup Whipping Cream, whipped

Preparation

Step 1

In food processor, pulse flour, sugar, baking powder, lemon zest and salt. Add butter; process to a coarse meal. Add half-and-half; pulse until mixture just comes together.

Pat into a 5" x 8" rectangle. Cut6 2-1/2 circles with cutter; bake on cookie sheet 15 minutes at 400 degrees. Cool.

Slice berries and mix with 1/3 cup (or to taste) sugar. Set aside for 15 minutes. Halve biscuits; layer with whipped cream and berries.
