Ingredients

  • 8 c. leaf lettuce, broken into bite size pieces
  • 2 c spinach, coarsely chopped
  • 1/2 c. alfalfa sprouts
  • 1/4 c. fresh cilantro, chopped
  • 4 c. chicken*
  • 3 c. broccoli, chopped
  • 1 c. slivered carrots

Step 1

In a large bowl, combine lettuce, spinach, sprouts, and cilantro. Drop chopped broccoli in boiling water. Boil for 2-3 minutes. Remove from boiling water and immediately under cold water. Pour boiling water over carrots and allow them to blanch for 1-2 minutes. Drain. Add chicken, broccoli and carrots to salad greens.
