We first had this recipe at the Black Rock Retreat Center in Lancaster, PA. My mother modified the recipe to add more dried fruit, nuts, and spices.
Delicious on a cold winter day.

Ingredients

  • 6 cups quick cooking oats
  • 2 cups packed brown sugar
  • 4 t. baking powder
  • 2 t. ground cinnamon
  • 1 t. nutmeg
  • 1 t. salt
  • 2 cup milk
  • 1 t. vanilla
  • 1 cup butter, melted
  • 4 eggs beaten
  • 1 1/2 - 2 cups various dried fruits and nuts like raisins, craisins, pecans, apricots, dried apples

Preparation

Step 1

Mix all dry ingredients, add wet ingredients, then fruits and nuts. Pour into a greased 9 X 13-inch cake pan.
Bake at 350 degrees for 40-45 minutes.

Leftovers: Let cool completely, cut into single serving portions. Wrap in plastic wrap and freeze. For a quick breakfast another day just heat single serving portion with a little milk in microwave for 1-2 minutes.
