Ingredients

  • 1 Box Angel Food Cake
  • 1 tsp Coconut Extract
  • 1-1/2 Pints Heavy Cream
  • 1 tbsp Knox Unflavored Gelatin
  • 2 tbsp Vanilla Sugar
  • 1 8 oz Cream Cheese, Fat Free is great
  • 2 baskets Ripe Strawberries

Preparation

Step 1

Make angel food cake per directions, adding coconut extract.

Bake as directed. Cool completely.

Whip the cream, adding unflavored gelatin that has been dissolved in two tablespoons of water. Add vanilla sugar or vanilla and sugar as desired.

Soften cream cheese and add about 1 cup of whipped cream.Chop up about 1 basket full of strawberries. Stir into mixture.

Cut cake in half, favoring the bottom half. Scoop out inside of bottom half. Set aside. Add cream cheese strawberry mixture, and fill in until smooth.

Place top back on and frost with remaining whipped cream.

Place whole or sliced strawberries around top and sides.

Keep in the refrigerator until ready to use.
