The white chocolate and apricots work really well together. I have also added small pieces of crystallized ginger for an extra burst of flavor.

Ingredients

  • Frosting:
  • 2 cups Flour
  • 3 tbsp Sugar
  • 3 tsp Baking Powder
  • 1/1 tsp Salt
  • 1/2 cup Dried Apricots
  • 1/2 cup White Chocolate Chips
  • 1-1/4 cups Heavy Cream
  • 2 tsp Lemon or Orange Zest
  • 1 cup Powdered Sugar
  • 2-3 tablespoons of orange or lemon juice, fresh if possible

Preparation

Step 1

In a medium sized bowl, mix the flour, sugar, baking powder, zest, vanilla chips and apricots.

Pour in whipping cream, mixing until just combined. It could be a little sticky but that's ok. On a floured surface, form dough into a circle about 3/4 inch thick. Cut into wedges and place on a parchment paper lined baking sheet.

Bake at 400 degrees for about 13-15 minutes.

Let cool before frosting

Frosting:
Mix together until it is smooth. Drizzle over the cooled scones.
