These are very good ginger scones if you like crystallized ginger.

Ingredients

  • 3 cups Flour
  • 1/2 cup Sugar
  • 5 tsp Baking Powder
  • 2 sticks Unsalted Butter, cut into small pieces
  • 1/2 cup Crystallized Ginger
  • 1 tbsp Ginger Powder
  • 1 Egg
  • 1/2 cup Milk

Preparation

Step 1

In a large bowl, mix together the flour, sugar, baking powder and ginger powder.

Add the butter and cut into the flour mixture using a pastry cutter until the mixture is crumbly. Add the ginger and mix well.

In a small bowl, whisk together the egg and milk until blended and add to the dry ingredients. Using a fork, stir until dough starts to form dough a large ball.

Place the dough on a lightly floured surface and press together with your hands until the dough comes together.

Roll out the dough into a 10-inch circle about 3/4-1 inch thick. Cut into wedges and place on parchment lined baking sheets.

Bake at 350 degrees until they are golden brown, 25-30 minutes.
