Ingredients

  • 3 cups White Whole Wheat Flour
  • 2 tsp Soda
  • 1 tsp Salt
  • 1/2 tsp Baking Powder
  • 1-1/2 tsp Cinnamon
  • 3/4 cup Nuts, chopped
  • 3 Eggs
  • 2 cups Sugar
  • 1 cup Vegetable Oil
  • 1 tbsp Vanilla
  • 2 cups Zucchini, shredded
  • 1 8-oz can Crushed Pineapple, drained

Preparation

Step 1

Combine flour, soda, salt, baking powder, cinnamon and nuts; set aside.

Beat eggs lightly in a large mixing bowl. Add sugar, oil and vanilla, beating until well mixed. Stir in zucchini and pineapple.

Add dry ingredients, stirring until just moistened. Pour batter into 2 greased and floured loaf pans.

Bake at 350 for 1 hour or until done. Cool 15 minutes in pan, then remove from pan and continue cooling on wire rack.
