Pumpkin Brulee

Brulee is actually a very easy dessert to make. This version uses pumpkin and spice for a fall recipe.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 3 egg yolks
  • 1/4 tsp nutmeg
  • 1/2 tsp allspice
  • 1/4 tsp cinnamon
  • pinch salt

Preparation

Step 1

Whisk together all ingredients. Pour into ceramic brulee dishes.
TIP: If you have a silicone trivet, set that at the bottom of a baking dish. (I used a pyrex 9X13 casserole dish)
This prevents the molds from moving around.
Fill the baking dish, halfway, withHOTwater.
Bake for approximately 35 minutes. The custard should have a little “wiggle in the middle” but should not be watery.

TIP: I put wide rubber bands around my thongs before grabbing the brulee dishes from the baking dish. This prevented my beautiful brulees from slipping. Worked great!

Refrigerator for at least 2 hours, or overnight.

Using a thin layer of fine sugar and a blowtorch, crystalize the sugar to create that beautiful crust.
