Ingredients

  • Basic White Sauce:
  • 3/4 cup Butter
  • 3/4 cup Flour
  • 1 1/2 tsp Salt
  • 1/2 tsp Sugar
  • 2 cups Milk
  • 2 cups Cream or 13 oz can of evaporated milk, plus 3 tbsp water
  • Clam Chowder:
  • 2 cans Minced Clams, 6 1/2 oz.
  • 1/2 cup Celery, diced
  • 1 cup Onions
  • 2 1/2 cups Potatoes, diced
  • Turkey Chowder:
  • 2 cups Turkey, cooked and cubed
  • 1/2 cup Celery, diced
  • 1 cup Onions, diced
  • 2 cups Potatoes, diced
  • 1 can Chicken Broth, 10 1/2 oz.
  • Vegetable Chowder:
  • 3 cups Asparagus, Broccoli, or any favorite Vegetable, chopped
  • 1 cup Onions, diced

Preparation

Step 1

Basic White Sauce:
Melt butter over medium heat. Add four, stir continuously until smooth.

Add salt, sugar, milk and cream. Simmer, stirring continuously until thick.

Add this sauce to the chowders listed below.

Clam Chowder:
Drain clams. Pour juice over potatoes, celery and onions. Add water to cover.

Simmer, covered, for 15 minutes.

Add white sauce and clams. Mix, heat and serve.

Turkey Chowder:
Put vegetables in pan. Add chicken broth. Add water to cover vegetables, if needed.

Cover, simmer for 15 minutes.

Add turkey and white sauce. Mix, heat and serve.

Vegetable Chowder:
Cover vegetables with water. Cover,simmer until barely done, 10 to 15 minutes.

Add white sauce. Mix, heat and serve.
