Ingredients

  • Optional ingredients:
  • 2 cups sesame seeds
  • 4 tablespoons black sesame seeds
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1/2 teaspoon table salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon

Preparation

Step 1

Butter a cookie sheet and a sheet of parchment.

In a large skillet or cast iron oven toast the sesame seeds on medium heat until golden and aromatic. Stir continuously. Remove from heat and transfer seeds to a bowl.

In the same skillet, mix the remaining ingredients. Bring to a boil on medium heat, stirring continuously, then let boil for 2 minutes, still stirring. Remove from heat.

Working quickly, stir seeds into the sugar mixture. Transfer immediately to the baking sheet, spreading as best you can with a greased spatula. Place the parchment on top of the hot candy mixture, then use the palm of your hand to press the seeds into an even and thin sheet.
Working quickly, score the sesame candy with a knife into diamond-shaped pieces. Once the entire piece is marked, go back and cut completely through. You may choose to skip the scoring process entirely, and instead break them into pieces as you would peanut brittle. (Candy mold presentation is at sprinklebakes.com)

Store in a tin layered with wax paper.
