- 2 Eggs, separated
- 2 cups Buttermilk
- 1 3/4 cup Flour
- 1 tsp Baking Soda
- 1 tsp Salt
- 1/4 cup Cooking Oil

Preparation
Step 1
Separate egg yolks from egg whites. Beat the egg whites on medium until stiff peaks form.
Set aside.
Mix buttermilk and egg yolks. Add flour, baking soda and salt stirring well. Add oil and mix well.
Gently fold in the egg whites. You want to keep a lot of volume in the batter.
Cook on a hot lightly oiled griddle.
