Ingredients

  • 1 chopped red bell pepper
  • 1 chopped onion
  • 2 cloves minced garlic
  • 1 chopped celery rib
  • 1 tbs oil
  • 1 tbs flour
  • 1 lb chicken 1/2 inch chicken pieces
  • 2 c. chicken broth
  • 6 oz tomato paste
  • 1/2 tsp salt
  • 10 oz frozen corn, thawed
  • 10 oz frozen baby lima beans, thawed
  • 3 c. cubed potatoes
  • 1 can diced tomatoes
  • 10 oz frozen okra
  • Sliced garlic bread (opt)
  • 2 cloves garlic cut in half (opt)

Preparation

Step 1

Heat a large Dutch oven over medium-high heat. Heat oil. Add bell pepper, onion, and celery to pan and cook 5 minutes, stirring occasionally. Combine flour and chicken in a medium bowl, toss to coat. Add chicken to pan and cook 2 minutes or until lightly browned. Stir in broth, bring to a boil. Cook until slightly thick, stirring constantly. Add tomato paste and remaining ingredients Cover, reduce heat, and simmer 30 minutes.
Rub bread slices with cut sides of garlic then discard garlic. Serve bread with stew.
