Ingredients

  • 1 to 1 1/2 pounds shrimp, peeled and deveined
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 6 to 8 asparagus, chopped
  • 1/4 red onion, chopped
  • 4 or 5 roasted red peppers cut into strips
  • 1 teaspoon oregano
  • 2 teaspoon green chile powder
  • 2 teaspoon cilantro
  • Pinch or two of sea salt
  • Pinch of pepper
  • 1 avocado, chopped
  • 1 lime, juiced

Preparation

Step 1

In a large pan, melt butter over medium heat. Add asparagus, onion, and garlic and cook for about 8 minutes. Add roasted red peppers, shrimp and seasonings. Cook just until shrimp turns pink (about 2-3 minutes).

Add avocado and juice of lime and stir. Remove from heat and serve with favorite side dish.
